Apple Dumplings

The newest addition to the tradition of a local family’s holiday meal.

The holidays can be a blur of activity, and it can seem as if there’s never enough time to get through your list of “must do’s. Jillian Emura, Marketing Manager at Kukui’ula shares this easy to prepare, sure to please desert that’s earned a permanent spot on the table of her family’s holiday meal.

“Our family gatherings usually include eight to twelve adults and six kids. It’s a festive occasion with the centerpiece of our holiday meal being a prime rib. Sides typically include a baked ham or turkey, brussel sprouts, salad, and scalloped potatoes. We usually have a pie and Chocolate Macarons from The Right Slice in Kalaheo. A few years back I started bringing these simple to make Apple Dumplings.”

The most basic definition of a dumpling can be described as a small piece of dough wrapped around a filling and then baked, boiled, or fried. Depending on where in the world you live, or based on family recipes, what you fill your dumpling with can vary. All the ingredients in the apple dumplings Jillian makes are readily available and can be found in most home kitchens. Prep time is around 30 minutes and start to finish is easily under 2 hours.

What makes this recipe especially easy is the no fuss dumpling wraps made with Pillsbury Original Crescent Rolls. Found in most local grocery stores, all you have to do is pop the container and separate the dough into 16 triangles. From here you add your prepared filling, roll them up, arrange on a pan and pop into a 350°F oven. The unexpected twist is the addition of 2/3 cup of lemon-lime soft drink.

While this is a traditional apple dumpling recipe, you can easily trade the Granny Smith apples for other fruits that are readily available from local Farmer’s markets found around Kauai. Kauai Culinary Market, held at the Shops at Kukui’ula every Wednesday starting at 4 p.m., offers a wide selection of locally grown fruits you can experiment with. Firmer fruits like pineapple, mango, coconut, and dragon fruit are potential replacements.

When asked more about the recipe, Jillian went on to say, “Considering my busy schedule, I really love the simplicity of this recipe. Apple Dumplings have become a regular star at our holiday gathering, and it seems like I can never bring enough of them.”

THE RECIPE

Apple Dumplings

Yield: Approx. 8 servings

Ingredients
• 2 medium Granny Smith apples (about 2 cups)
• 2 cans (8 oz) refrigerated Pillsbury Original Crescent Rolls (8 count)
• 3/4cup butter, melted
• 1cup packed brown sugar
• 1teaspoon ground cinnamon
• 2/3cup Sprite™ lemon-lime soft drink (from 20-oz bottle)

Steps
1. Heat oven to 350°F. Spray 13×9-inch pan with cooking spray.
1. Peel and core apples; cut into 16 slices.
2. Unroll dough; separate into 16 triangles. Place 1 apple slice on shortest side of each dough triangle. Starting with shortest side of triangle, roll to opposite point, wrapping dough around apple slice; arrange in pan.
3. In medium bowl, stir together melted butter, brown sugar and cinnamon. Pour mixture evenly over dumplings.
4. Pour soft drink in center and along edges of pan. (Do not pour on top of dumplings.)
5. Bake 33 to 36 minutes or until golden brown. Let stand 15 minutes.
